Sautéed Herb Shrimp With Avocado

The combination of herb-seasoned shrimp, creamy avocado and bright corn salsa creates something that feels fresh but still comforting, which is exactly what you want when gathering around the table with family.

Ingredients

  • 1 cup ¡Yo Quiero! Corn Salsa
  • 1 lb. large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon roasted herb seasoning
  • 1 ripe avocado, diced
  • Fresh lime wedges (optional)
  • Fresh cilantro for garnish (optional)

Directions

  • Season the shrimp: Pat shrimp dry and place in a bowl. Toss with olive oil, salt, pepper, garlic powder, onion powder and roasted herb seasoning until evenly coated.
  • Sauté: Heat a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2–3 minutes per side, until pink and opaque. Do not overcrowd the pan.
  • Assemble: Transfer shrimp to a serving platter. Top with diced avocado and a generous spoonful of ¡Yo Quiero! Corn Salsa.
  • Finish: Add a squeeze of fresh lime and a sprinkle of cilantro if desired. Serve immediately.
