Shrimp Ceviche

Shrimp Ceviche is as fresh as the cool summer breeze! It is light, easy, and refreshingly full of seafood goodness, avocado, red onion, jalapeño, and oh so delicious avocado chunks.

Ingredients

  • 1 8oz package of ¡Yo Quiero!™️ Mashed Avocado
  • 1 lbs Raw Shrimp, peeled & deveined (13-15 count)
  • 1 tsp Kosher Salt
  • 1/4 tsp Coarse Ground Black Pepper
  • 2 Limes, juiced & zested
  • 1 Lemon, juiced & zested
  • 1 Vine Tomato, chopped
  • 1/4 Red Onion, minced
  • 1/2 Jalapeño Pepper, deveined & minced
  • 2 tbsp Cilantro, chopped

Directions

  • Add the shrimp, salt, pepper, lime juice and lemon juice to a large bowl and let sit for 10 minutes or until the shrimp turns pink.

     

  • Toss gently with the remaining ingredients (excluding the avocado) and refrigerate for at least 30 minutes before serving.

     

  • Serve over ¡Yo Quiero!™️ Mashed Avocado with crackers, tortilla chips, or pita chips.
