Oven Roasted Mexican Corn Dip
Sweet and creamy, with the perfect amount of spice, this creamy and cheesy Oven Roasted Mexican Corn Dip is the perfect snack. It’s so good, you won’t even need the chips. Just grab a spoon!

Ingredients
- 1 12oz package of ¡Yo Quiero!™️ Traditional Queso
- 2 cups Corn Kernals, fresh or frozen
- 2 Jalapeños, seeded and diced
- 1 Red Bell Pepper, diced
- 1/2 Yellow Onion, chopped
- 2 cloves Garlic, minced
- 1 tbs Olive Oil
- 1 tsp Ground Cumin
- 1/4 tsp Paprika
- Tortilla Chips
Directions
Drain corn and let it dry on a paper towel to remove excess water.
Preheat oven to 400° F.
Combine the corn, jalapeño, queso, red bell pepper, onion, garlic, and spices in a large bowl.
Scoop corn mixture into a cast-iron skillet or baking dish and bake for 20 minutes.
Serve immediately with tortilla or pita chips.
*Note: If your cooking with leftover corn then skip to step two.
