1 can (15 oz) black-eyed peas, drained and rinsed

1 cup diced tomatoes

1 cup diced bell peppers (any color)

1 cup diced red onion

1 cup corn kernels (fresh, canned, or frozen)

1/4 cup chopped fresh cilantro

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper, to taste

DIRECTIONS
  1. In a large mixing bowl, combine the black beans, black-eyed peas, diced tomatoes, bell peppers, red onion, corn, and chopped cilantro.
