Shrimp and Guac Toastadas

Enjoy the last few days of summer with these delicious shrimp and guac tostadas! Cotija cheese, cilantro, tomato and ¡Yo Quiero! Hatch Chile Guacamole perfectly complement the crunchy tortilla and fresh shrimp — and fresh squeeze of lime juice lets you hold on to those summer flavors for one more bite!

Servings: 12–16 mini tostadas

Ingredients

  • 1 container ¡Yo Quiero! Hatch Chile Guacamole
  • 12–16 small corn street taco tortillas or cut regular tortillas into ~3-inch circles
  • Avocado oil 
  • 1 lb shrimp, peeled and deveined (small/medium size)
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2  tsp cumin 
  • 1/2 tsp garlic powder
  • Salt and black pepper
  • 1/2 roma tomato, finely diced
  • 1/2 white onion, finely diced
  • Finely chopped cilantro, garnish
  • Cotija cheese, garnish
  • Lime juice, garnish

Directions

  • Prep tortillas to bite size pieces and heat 1/2- to 1/4-inch avocado oil in a skillet over medium heat.
  • Fry tortilla rounds 1–2 min per side until golden and crisp. Add to a wire rack and season immediately with salt. 
  • Remove the tails from the shrimp and season with chili powder, smoked paprika, cumin, garlic powder, salt and pepper. 
  • Sear in a skillet with a little oil, 1–2 min per side, until pink and cooked through.
  • Assemble tostadas with a good scoop of ¡Yo Quiero! Hatch Chile Guacamole, 1 shrimp, and a little tomato, white onion, cilantro, and cotija cheese on each one. Squeeze fresh lime juice. Serve and enjoy!
