Queso Corn Dip

Ingredients

  • 2 Cups Corn Kernals, fresh or frozen
  • 2 Jalapeños, seeded and diced
  • 1 Red Bell Pepper, diced
  • 1/2 Yellow Onion, chopped
  • 2 cloves Garlic, minced
  • 1 15 oz Tub of ¡Yo Quiero!™️ 4 Pepper Queso
  • 1 tbs Olive Oil
  • 1 tsp Ground Cumin
  • 1/4 tsp Paprika
  • Tortilla Chips

Instructions

  • Drain corn and let dry on a paper towel to remove excess water.
  • Preheat oven to 400° F.
  • Combine the corn, jalapeño, queso, red bell pepper, onion, garilic, and spices in a large bowl.
  • Scoop corn mixture into a cast iron skillet or baking dish and bake for 20 minutes.
  • Serve immediately with totilla or pita chips.
