1. Drain corn and let it dry on a paper towel to remove excess water.
2. Preheat oven to 400° F.
3. Combine the corn, jalapeño, queso, red bell pepper, onion, garlic, and spices in a large bowl.
4. Scoop corn mixture into a cast-iron skillet or baking dish and bake for 20 minutes.
5. Serve immediately with tortilla or pita chips.
*Note: If your cooking with leftover corn then skip to step two.
