INGREDIENTS
2 tablespoons olive oil
1 medium onion, finely chopped
4 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 jalapeño, minced (remove seeds for less heat)
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/2 teaspoon chili powder

4 cups vegetable broth
1 can diced tomatoes
1 bay leaf
Salt and pepper, to taste
Juice of 1 lime
Fresh cilantro, for garnish
DIRECTIONS
1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Sauté until the onions are translucent and the vegetables are tender (about 5-7 minutes).
2. Add the jalapeño, cumin, smoked paprika, and chili powder. Stir well and let the spices bloom for about 1 minute.
3. Pour in the black bean dip, vegetable broth, diced tomatoes, and throw in the bay leaf. Give it a good stir, then bring it to a boil.
