INGREDIENTS
2 Tablespoons vegetable oil
6 corn tortillas Cut into squares or the shape of your choice.
¼ of a medium onion (about ⅓ cup) finely chopped
1 large jalapeño no seeds, finely chopped
4 large eggs
queso fresco, crumbled
cilantro, minced
¼ teaspoon kosher salt
¼ teaspoon black pepper
DIRECTIONS
- Heat oil over medium heat in a medium nonstick frying pan. When the oil is hot, add the corn tortillas and fry just until crisp, about 2 minutes. Remove to a paper towel-lined plate to drain, and set aside.
- In the same frying pan, add the onion and jalapeño. Cook on medium-high heat until they start to soften up. About 1 minute.
- Cook eggs over-easy, or they reach your desired consistency. Add salt and pepper, as desired.
- Place your over-easy eggs, onion, and jalapeno on your crispy tortilla chips.
- Serve immediately, and finish with ¡Yo Quiero! Avocado Salsa, crumbled queso fresco, cilantro, and, if desired, some ¡Yo Quiero! Mashed Avocado.
