INGREDIENTS
Pesto:
1 package of ¡Yo Quiero! Mashed Avocado
1 cup (packed) fresh basil leaves
1/3 cup pine nuts
3 cloves garlic, chopped
Juice of 1 lemon
2 tablespoons extra-virgin olive oil
Water as needed
Salt and pepper to taste
Pasta:
One box Rotini noodles (Or pasta of your choosing)
Fresh Cherry Tomatoes, Cut in Half
DIRECTIONS
- Combine ¡Yo Quiero! Mashed Avocado, basil, pine nuts, and garlic in a food processor or blender. With the machine running, slowly stream in the lemon juice, olive oil, and water as needed to achieve a smooth pesto. Puree until thoroughly blended and creamy.
- Season with salt and pepper to taste.
- Follow the cooking directions on the box of Rotini Noodles or your chosen pasta.
- Drain pasta, saving ½ cup of pasta water.
- Combine Avocado Pesto with your pasta, mixing in a little bit of your saved pasta water unit you have an emulsified sauce to your preferred consistency.
- Add cut cherry tomatoes, and serve!
