Mexican Meatballs with Queso
These Mexican Meatballs are packed with spices and smothered in a delicious white queso sauce. Perfect for your next party. Make a double batch because these won’t last long.

Ingredients
- 1 12oz package of ¡Yo Quiero!™️ Queso Blanco
- 1 lb Lean Ground Beef
- 3/4 cup Pork Rinds, crushed
- 1 Large Egg
- 1/4 cup Onion, minced
- 1/4 cup Cilantro, minced
- 2 Garlic Cloves, minced
- 2 tsp Chili Powder
- 2 tsp Cumin
- 1 tsp Salt
- 1/2 tsp Garlic Powder
- 2 slices Bacon, for garnish
- 1 Jalapeño, for garnish
Directions
Preheat oven to 350° F. Spray a cast iron skillet or baking dish.
Add all of the ingredients for the meatballs into a large mixing bowl and mix until well combined.
Use a medium cookie scoop to scoop out balls of meat and roll between your hands to form the meatballs.
Place the meatballs on the prepared baking sheet and bake for 25 minutes or until cooked through.
When the meatballs are nearly cooked through, heat up the queso dip in the microwave in 30 second increments to avoid burning.
Pour into a serving bowl and top with bacon and jalapeño.
- Arrange meatballs around the cheese sauce and serve with toothpicks for dipping.
