Ingredients

  • 1 cup ¡Yo Quiero! Queso Blanco
  • 4 cups thinly sliced potatoes
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 cup crushed Ritz crackers for topping

Directions

  • Preheat the oven to 350°F (175°C).

     

  • In a saucepan, melt butter over medium heat. Stir in flour until well blended.

     

  • Gradually whisk in milk, stirring constantly until the mixture thickens.

     

  • Add ¡Yo Quiero! Queso Blanco, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.

     

  • Layer sliced potatoes in a greased baking dish. Pour the cheese sauce over the potatoes.

     

  • In a separate bowl, mix crushed Ritz crackers with a little melted butter.

     

  • Sprinkle the cracker mixture over the potatoes.

     

  • Bake for 45-50 minutes or until potatoes are tender and the top is golden brown.
