This Hanukkah, we’re putting a delicious spin on the classic Latkes by crowning them with creamy ¡Yo Quiero! Mashed Avocado. Traditionally served with sour cream or applesauce, our Latkes boast a unique flavor combination. Ingredients

  • ¡Yo Quiero! Mashed Avocado
  • 4 large potatoes, peeled and grated
  • 1 onion, grated
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Sour cream (optional)

Directions

  • Preheat the oven to 200°F (93°C) to keep latkes warm.

     

  • Place grated potatoes and onions in a clean kitchen towel and squeeze out excess moisture.

     

  • In a bowl, combine grated potatoes, onions, beaten eggs, flour, salt, and pepper.

     

  • Heat oil in a skillet over medium-high heat.

     

  • Drop spoonfuls of the potato mixture into the hot oil, pressing down to form pancakes.

     

  • Fry until golden brown on both sides, about 3-4 minutes per side.

     

  • Transfer latkes to a paper towel-lined plate to drain excess oil.

     

  • Keep latkes warm in the preheated oven.

     

  • Serve latkes topped with a dollop of ¡Yo Quiero! Mashed Avocado and optional sour cream.
