Ingredients

  • 1 12 oz package of ¡Yo Quiero!™️ 4 Pepper Queso
  • 1 10oz can Ro*tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1/3 cup canned 100% pure pumpkin puree
  • 2 chipotle chilies
  • 2 tsp adobo sauce

Instructions

  • Place the ¡Yo Quiero!™️ 4 Pepper Queso into a microwave-safe bowl.
  • Add the can of Ro*tel® Original Diced Tomatoes & Green Chilies, including the liquid from the can, to the queso. Then, add the pumpkin puree. Stir gently to combine.
  • Chop the chipotle chilies into a fine dice and add them, plus 2 teaspoons of the adobo sauce from the can, to the cheese mixture. Stir.
  • Place the bowl in the microwave and heat for one minute. Remove from the microwave carefully and stir. Microwave for one minute intervals, stirring in between until the cheese is hot.
  • Serve the queso with tortilla chips or vegetable sticks.
