Avocado Chicken Salad
This avocado chicken salad is made with 100% avocado, lemon, and dijon mustard! It's creamy and flavorful and perfect for a low carb lunch.

Ingredients
- 3 cups Chicken, diced
- 1 15 oz pkg of ¡Yo Quiero!™️ Super Chunky, 100% Avocado
- ¼ cup Dijon Mustard
- ¼ cup Celery, finely diced
- 1 tbsp Canola Oil
- 3 tsp Lemon Juice
- ¼ cup White Onion, diced
- 2 tbsp Shallots
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Dried Chives
Instructions
- Stir together all ingredients together EXCEPT the chicken. Once blended, gently fold in the chicken.
- Refrigerate for about an hour then serve on sandwich bread, avocado half, or stuffed in bell peppers.
- To store, place in a bowl and cover completely with plastic wrap so that no part of the chicken salad is exposed to air. Will keep a couple of days in the fridge.
