INGREDIENTS
DRESSING
1/2 Red Chili, seeded and finely diced
1 tbsp Mint, finely chopped
1/2 Lemon, zested & juiced
1 Tomato, finely diced
1 tsp White Wine Vinegar
TOAST
1 8oz package of ¡Yo Quiero!™️ Mashed Avocado
2 tbsp Fat-Free Yogurt
1/2 Lemon, juiced
2 slices Rye Bread, toasted
A pinch of Cayenne Pepper
2.5 oz Smoked Salmon
1/4 Cucumber, ribboned with a vegetable peeler
A handful of Salad Cress
DIRECTIONS
1. Make the dressing by mixing together the red chili, mint, lemon, tomato, and white wine vinegar. Set mixture aside.
2. Add the ¡Yo Quiero!™️ Mashed Avocado into a bowl. Add the yogurt and lemon juice and mash everything with a fork. Season well with salt and black pepper.
3. Divide the mixture between the toasted rye bread, sprinkle over a little cayenne pepper and add the smoked salmon and cucumber. Spoon over the dressing, then top with the cress.
