Ingredients

  • 16 oz Dry Elbow Macaroni
  • 1 cup Mayonnaise
  • 1 tbsp Dijon Mustard
  • Kosher Salt
  • Ground Black Pepper
  • 1 Red Bell Pepper, seeded and minced
  • 1 Celery minced
  • 2 tbsp Sweet Relish
  • 1 tsp Paprika, to garnish (optional)
  • Parsley, chopped, to garnish (optional)

Instructions

  • Heat large pot of salted water over medium-high heat and bring to rapid boil. Cook macaroni according to package directions for al dente. Drain macaroni and let cool to room temperature.
  • In large bowl, whisk mayonnaise and mustard until combined. Season with salt and pepper to taste. Add bell pepper, celery, and sweet relish to bowl and fold into dressing. Stir in macaroni and until well-coated.
  • Cover and refrigerate for at least 1 hour before serving. Sprinkle with freshly chopped parsley and paprika
  • Serve with a side of ¡Yo Quiero!™️ Original Guacamole and their favorite veggies of chips for a well rounded meal.

Notes

You can substitute the veggies listed above with others that your kids might enjoy, such as green beans, broccoli, summer squash, etc., so long as they are cut into very small pieces.
