Ever wonder how to sneak veggies into your kids lunch? This Confetti Macaroni Salad recipe is the perfect way to get the kiddos to eat a serving of veggies in a delicious way.

16ozDry Elbow Macaroni
Ground Black Pepper
1Red Bell Pepper, seeded and minced
1tspPaprika, to garnish (optional)
Parsley, chopped, to garnish (optional)
Heat large pot of salted water over medium-high heat and bring to rapid boil. Cook macaroni according to package directions for al dente. Drain macaroni and let cool to room temperature.
In large bowl, whisk mayonnaise and mustard until combined. Season with salt and pepper to taste. Add bell pepper, celery, and sweet relish to bowl and fold into dressing. Stir in macaroni and until well-coated.
Cover and refrigerate for at least 1 hour before serving. Sprinkle with freshly chopped parsley and paprika

You can substitute the veggies listed above with others that your kids might enjoy, such as green beans, broccoli, summer squash, etc., so long as they are cut into very small pieces.
