Stuffed Plantain Rolls

A South American twist on classic sushi rolls, these bite-sized plantain rolls are a great lunch or dinner recipe — and ideal for entertaining! Pair flavorful ingredients with plantain strips and top with a dollop of ¡Yo Quiero! guacamole for the perfect finish.

Ingredients

  • ¡Yo Quiero! Guacamole Dip
  • 1.5 lbs roast beef
  • 1/2 bell pepper
  • 1 sweet chili pepper
  • 1/2 onion
  • 1/2 tomato
  • 3 plantains
  • Mozzarella cheese
  • Oil
  • Salt

Directions

  • First, let's prepare the grilled meat. To do this, we'll place the onion, sweet peppers, and bell pepper in a pan with a little oil and sauté lightly. Then, add the meat, which should be finely chopped, and cook over medium heat.
  • Once it's ready, let it rest while we peel and chop the plantain into thin strips. Cook each plantain strip in a pan over low-medium heat. When we see that they're cooked, remove from the heat. You can add a tablespoon of butter when cooking to give the plantains color (optional).
  • Take each cooked and stretched plantain strip and add a little cheese and a little meat. Roll them up, and to make sure they're "armed" and don't fall apart, add a strip of bamboo or a stick. For the topping, don’t forget to add some of your favorite dips from ¡Yo Quiero!, I used the guacamole. Enjoy!
