Guacamole Deviled Eggs

Guacamole Deviled Eggs are a fresh spin on a favorite appetizer. It is amazing how an easy tweak like adding fresh guacamole, jalapeño peppers and lime juice really takes these over the top. Serve ’em up on game days and through all of the fall holidays.

Ingredients

  • 1 15oz package of ¡Yo Quiero!™️ Original Guacamole
  • 6 Large Eggs, hard-boiled
  • 1 tbsp Lime Juice
  • 1 tsp Red Onion, minced
  • 1 tbsp Jalapeño Pepper, minced
  • 1 tbsp Cilantro, chopped
  • Kosher Salt & Ground Pepper, to taste
  • 1 tbsp Tomato, diced
  • A pinch of Chile Powder, for garnish

Directions

  • Peel the cooled hard-boiled eggs.

     

  • Cut the eggs in half horizontally, and set the yolks aside.

     

  • In a bowl, mix the ¡Yo Quiero!™️ Original Guacamole and 2 whole egg yolks; save the rest and use it in tuna or chicken salad.

     

  • Mix in lime juice, red onion, jalapeño pepper, cilantro, salt, and pepper and adjust to taste. Gently fold in tomato.

     

  • Scoop heaping spoonfuls of the guacamole into the halved eggs.

     

  • Sprinkle with a little chile powder for color and arrange on a platter.
