Cottage Cantina

Ingredients

Filling

  • Chicken, shredded
  • Sour cream
  • Green chiles, diced
  • Oregano
  • Cumin
  • Garlic powder
  • Salt
  • Pepper

 

Avocado Salsa Enchiladas

  •  ¡Yo Quiero! Avocado Salsa
  • Monterey Jack cheese, shredded
  • Red onion, chopped
  • Cilantro
  • Avocado
  • Lime wedges

Directions

Make the filling

  • Mix shredded chicken with sour cream, diced green chiles, oregano, cumin, garlic powder, salt, and pepper.

Assemble the avocado salsa enchiladas with ¡Yo Quiero! Corn Salsa

  • Soften tortillas: Lightly warm tortillas in ¡Yo Quiero! Avocado Salsa in a sauce pan so they’re soft and easy to roll.
  • Assemble enchiladas: Fill each tortilla with the chicken mixture, roll them up, and place in a baking dish on top of a layer of ¡Yo Quiero! Avocado Salsa.
  • Top and bake: Pour more ¡Yo Quiero! Avocado Salsa over the top, add shredded Monterey Jack cheese, and bake until bubbly and golden, around 10 minutes.
  • Garnish and serve: Finish with chopped red onion, cilantro, avocado, lime wedges and your fav ¡Yo Quiero! dip.
