Grilled Feta Dip

Add some ¡Yo Quiero! spice to this creamy grilled feta dip. With only six ingredients and a less than 30-minute cook time, this recipe is clean, simple, and full of hearty flavors. Top with a variety of ¡Yo Quiero! dips for some extra texture and taste.

Ingredients

Grilled Feta Dip

  • 3 tbsp avocado oil
  • 2 x 8 oz (16 oz) creamy feta cheese blocks
  • 3 tbsp garlic
  • 3/4 cup shallot, finely chopped
  • 8 oz regular cream cheese
  • Juice ½ fresh lime

 

Toppings

  • !Yo Quiero¡ Escabeche
  • !Yo Quiero¡ Medium Salsa
  • !Yo Quiero¡ Avocado Salsa Verde
  • Grilled corn
  • Sliced avocado
  • Fresh cilantro
  • Salt

Directions

  • Preheat 8-inch cast iron skillet on grill for 5 minutes over medium/high heat
  • Add avocado oil and creamy feta blocks
  • Grill feta cheese until begins to soften ~5 minutes
  • Add garlic and shallots
  • Sauté for an additional few minutes until lightly browned
  • Add cream cheese and mix well
  • Grill with lid closed for 8-10 minutes mixing occasionally until sides are lightly browned and dip is melted/creamy
  • Top with grilled corn, !Yo Quiero¡ Escabeche, !Yo Quiero¡ Medium Salsa, !Yo Quiero¡ Avocado Salsa Verde, sliced avocado, fresh cilantro and salt
  • ENJOY with grilled pita, tortilla chips or your favorite dipping ingredients!
