Avocado Toast with Smoked Salmon
Salmon Avocado Toast – deliciously creamy avocado toast with smoked salmon, yogurt and cucumber over bread for little a bite of luxury any day of the week.

Ingredients
DRESSING:
- 1/2 Red Chili, seeded and finely diced
- 1 tbsp Mint, finely chopped
- 1/2 Lemon, zested & juiced
- 1 Tomato, finely diced
- 1 tsp White Wine Vinegar
TOAST:
- 1 8oz package of ¡Yo Quiero!™️ Mashed Avocado
- 2 tbsp Fat-Free Yogurt
- 1/2 Lemon, juiced
- 2 slices Rye Bread, toasted
- A pinch of Cayenne Pepper
- 2.5 oz Smoked Salmon
- 1/4 Cucumber, ribboned with a vegetable peeler
- A handful of Salad Cress
Directions
- Make the dressing by mixing together the red chili, mint, lemon, tomato, and white wine vinegar. Set mixture aside.
- Add the ¡Yo Quiero!™️ Mashed Avocado into a bowl. Add the yogurt and lemon juice and mash everything with a fork. Season well with salt and black pepper.
- Divide the mixture between the toasted rye bread, sprinkle over a little cayenne pepper and add the smoked salmon and cucumber. Spoon over the dressing, then top with the cress.
