Avocado Toast with Smoked Salmon

Salmon Avocado Toast – deliciously creamy avocado toast with smoked salmon, yogurt and cucumber over bread for little a bite of luxury any day of the week.

Ingredients

DRESSING:

  • 1/2 Red Chili, seeded and finely diced
  • 1 tbsp Mint, finely chopped
  • 1/2 Lemon, zested & juiced
  • 1 Tomato, finely diced
  • 1 tsp White Wine Vinegar

TOAST:

  • 1 8oz package of ¡Yo Quiero!™️ Mashed Avocado
  • 2 tbsp Fat-Free Yogurt
  • 1/2 Lemon, juiced
  • 2 slices Rye Bread, toasted
  • A pinch of Cayenne Pepper
  • 2.5 oz Smoked Salmon
  • 1/4 Cucumber, ribboned with a vegetable peeler
  • A handful of Salad Cress

Directions

  • Make the dressing by mixing together the red chili, mint, lemon, tomato, and white wine vinegar. Set mixture aside.
  • Add the ¡Yo Quiero!™️ Mashed Avocado into a bowl. Add the yogurt and lemon juice and mash everything with a fork. Season well with salt and black pepper.
  • Divide the mixture between the toasted rye bread, sprinkle over a little cayenne pepper and add the smoked salmon and cucumber. Spoon over the dressing, then top with the cress.
