Avocado Chicken Salad

This avocado chicken salad is made with 100% avocado, lemon, and dijon mustard! It's creamy and flavorful and perfect for a low carb lunch.

  • 3 cups Chicken, diced
  • 1 15 oz pkg of ¡Yo Quiero!™️ Super Chunky, 100% Avocado
  • ¼ cup Dijon Mustard
  • ¼ cup Celery, finely diced
  • 1 tbsp Canola Oil
  • 3 tsp Lemon Juice
  • ¼ cup White Onion, diced
  • 2 tbsp Shallots
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Dried Chives


  • Stir together all ingredients together EXCEPT the chicken. Once blended, gently fold in the chicken.
  • Refrigerate for about an hour then serve on sandwich bread, avocado half, or stuffed in bell peppers.
  • To store, place in a bowl and cover completely with plastic wrap so that no part of the chicken salad is exposed to air. Will keep a couple of days in the fridge.
