Ingredients

  • 1 cup ¡Yo Quiero! Queso (Traditional or Blanco)
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup beer
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • Chives for garnish
  • Optional: garlic-rubbed toast for serving

Directions

  • In a large pot, melt butter over medium heat. Add diced onion, carrots, and celery. Cook until vegetables are softened.
  • Add minced garlic and cook for an additional minute.
  • Stir in flour to create a roux, cooking for 2-3 minutes.
  • Gradually whisk in broth and beer, stirring constantly to avoid lumps.
  • Bring the soup to a simmer and let it thicken.
  • Reduce heat to low and add ¡Yo Quiero! Queso and shredded cheddar cheese. Stir until melted.
  • Season with salt and pepper to taste.
