Avocado Pesto Pasta

This Avocado Pesto Pasta is the perfect week night meal that combines two of our favorite things; Elegance and convenience. ¡Yo Quiero! Mashed Avocado adds a flavorful twist to a beloved classic that couldn’t be easier to throw together.

Ingredients

Pesto:

  • 1 package of ¡Yo Quiero! Mashed Avocado
  • 1 cup (packed) fresh basil leaves
  • 1/3 cup pine nuts
  • 3 cloves garlic, chopped
  • Juice of 1 lemon
  • 2 tablespoons extra-virgin olive oil
  • Water as needed
  • Salt and pepper to taste

Pasta:

  • One box Rotini noodles (Or pasta of your choosing)
  • Fresh Cherry Tomatoes, Cut in Half

Directions

  • Combine ¡Yo Quiero! Mashed Avocado, basil, pine nuts, and garlic in a food processor or blender. With the machine running, slowly stream in the lemon juice, olive oil, and water as needed to achieve a smooth pesto. Puree until thoroughly blended and creamy.
  • Season with salt and pepper to taste.
  • Follow the cooking directions on the box of Rotini Noodles or your chosen pasta.
  • Drain pasta, saving ½ cup of pasta water.
  • Combine Avocado Pesto with your pasta, mixing in a little bit of your saved pasta water unit you have an emulsified sauce to your preferred consistency.
  • Add cut cherry tomatoes, and serve!
