A Tex-Mex staple for many, these chicken fajitas are made for the grill and packed full of the flavors you know and love. The only thing that could make this beautifully marinated chicken any better is to surround it in a soft tortilla with some fajita veggies and a spoonful of our ¡Yo Quiero! Chunky Guacamole. INGREDIENTS
6 Boneless Chicken Breasts
1 Onion, thinly sliced
2 Bell Peppers, thinly sliced
1 cup Cilantro, chopped
1/2 cup Olive Oil
1/2 cup Fresh Lime Juice
3 tsp Kosher Salt
1 15oz package of ¡Yo Quiero! Chunky Guacamole
Corn or Flour tortillas
DIRECTIONS
- Combine olive oil, lime juice, cilantro, and salt in a bowl and stir to combine.
- Place chicken in a storage container and pour marinade over the top.
- Use your hands and gently massage the marinade into the chicken and make sure to coat the chicken evenly.
- Cover and place in refrigerator for at least 30 minutes.
- While your chicken rests, cook your sliced fajita veggies in a well-oiled pan on medium heat for 10 minutes or until soft.
- Grill on direct medium heat for 10-15 minutes (total) or 5-7 minutes per side (or until internal temp reads 160° F).
- Remove from grill and let rest for at least 5 minutes.
- Serve on flour or corn tortillas with the grilled veggies and top it off with your favorite ¡Yo Quiero! Dips like Chunky Spicy Guacamole.
