AVOCADO CHICKEN SALAD
Easy and Healthy! Avocado chicken salad with 100% avocado, chopped cooked chicken, dijon, celery, and onion. No Mayo!

INGREDIENTS
3 cups Chicken, diced
1 8oz package of ¡Yo Quiero!™️ Mashed Avocado
¼ cup Dijon Mustard
¼ cup Celery, finely diced
1 tbsp Canola Oil
3 tsp Lemon Juice
¼ cup White Onion, diced
2 tbsp Shallots
1 tsp Salt
1 tsp Black Pepper
1 tsp Dried Chives
DIRECTIONS
1. Stir together all ingredients together EXCEPT the chicken. Once blended, gently fold in the chicken.
2. Refrigerate for about an hour then serve on sandwich bread, avocado half, or stuffed in bell peppers.
3. To store, place in a bowl and cover completely with plastic wrap so that no part of the chicken salad is exposed to air. Will keep a couple of days in the fridge.
